Is my phone compatible with a Thailand eSIM?

How many days of data do I actually need in Thailand?

This is the question that stresses people out the most. It shouldn't.

What is the data speed like?

Full speed, until the last megabyte. On Kolet's fixed plans, there is no throttling, no fair-use cap, and no speed reduction as you approach your limit. You get 4G/LTE through AIS and DTAC for the entire plan.

On unlimited day-based plans, you get full speed up to 5 GB per 24-hour window, then the connection drops to 1 Mbps until the window resets. That is enough for maps, messaging, and email.
